Thomas Eichwald is the executive chef at the “Im Garten” restaurant at the Seehotel Hubertushof in Velden—with a clear commitment to Carinthia and Lake Wörthersee. His cuisine is based on local fish, fresh vegetables, herbs, and specialties from regional producers; traditional Austrian culinary art is reimagined with contemporary touches. He works closely with local producers and places great emphasis on seasonality and treating high-quality products with respect. Thomas Eichwald earned his first green Michelin star in 2026—and rightly so: Like his co-host for the evening, Leo Suppan, he is a member of the Slow Food Chef Alliance in Carinthia. “See meets Leiten” is the motto—and that’s reflected on the plate. Wines from the Lexer-Kegley winery in Karnburg round out the evening.
