Gloria Clama brings the forests of the Carnic Alps to the table—more consistently than many would think possible. At Indiniò in Raveo, she explores, cultivates, and cooks with ingredients that hardly anyone else knows about: chamomile, larch smoke, hay, spruce needles, lichen, and raspberries. The surge in popularity she gained from *MasterChef* marked the beginning of a culinary style that has since grown in depth and awareness. Her gnocchi—a declaration of love for her homeland on *MasterChef*—remain a staple on the menu to this day. By her side: her partner Mirco as maître d’ and a team she considers family.
